The Sustainability of Pecorino Toscano PDO
Climate and energy shocks, along with social and environmental challenges related to sustainable development, have led to a new consumer awareness.
For this reason, an in-depth study was carried out on the impact of the Pecorino Toscano supply chain in terms of greenhouse gas emissions; on the search for mitigation actions and the compensation of production impacts; and on the development of a first prototype standard for the certification of sustainable production within our Designation.
It all begins with the raw material: milk. And to ensure high-quality milk, the focus has to be on sheep’s health.
In the dairy sector, animal welfare is still not clearly regulated or certified. The Pecorino Toscano PDO Consortium aims to take action in this area by incorporating a commitment to animal welfare into the broader path toward sustainability and traceability.
The goal is clear, but the journey is long: every day we take a step, write a page. And every step, every page is part of a sustainability journal that is updated daily.
