The Cheesemaking Regulations

Pecorino Toscano is manufactured according to procedural guidelines that ensures the product meets all the requirements to obtain the PDO, meaning that only the cheese, seasoned, packaged and distributed according to the rules contained in the of Pecorino Toscano PDO Cheesemaking Regulations can be defined as such, guaranteeing consumer product excellence.

The protected designation of origin ‘Pecorino Toscano’ is reserved for a soft cheese or semi-hard cheese, produced exclusively with whole sheep’s milk from the Region of Tuscany, as well as from Allerona municipalities and Castiglione del Lago in Umbria and the municipalities of Acquapendente, Onano, San Lorenzo Nuovo, Grotte di Castro, Gradoli, Talentano, Farnese, Ischia di Castro, Montefiascone, Bolsena and Capodimonte in Lazio (articles 1, 2 and 3 of the Pecorino Toscano Production Procedural Guidelines).
